This fried chicken recipe is made when I cannot find any egg to coat the chicken with. Thus, I have to find other ways to coat the chicken and the chicken more delicious.
Ingredients:
1. 1/2 clove of garlic
2. 1 onion
3. 1 shallot
4. 1 inch of young ginger
5. 5 pieces of Thai Peppers (Cili Padi)
6. Some salt, brown sugar and pepper for taste
7. Some oyster sauce
8. Some soy sauce
9. Some sesame seed oil
10. A box/packet of pre-mix fried chicken flour
11. 1/2 kg pieces of chicken
Instructions:
1. Peel the skins off the garlic, onion, shallot and ginger. Wash all when finished peeling.
2. Crush all garlic, onion, shallot, Thai peppers and ginger into a paste.
3. Wash clean the pieces of chicken. And dry the chicken piece with kitchen tissue.
4. Mix the paste of garlic, onion, shallot and ginger with some salt, brown sugar and pepper, add some oyster sauce, a bit of soy sauce and sesame seed oil. This mixture will become the marinating mixture for the chicken.
5. Mix the chicken with the marinate and leave it in the fridge for at least 30 minutes for the flavors to be absorb into the chicken.
6. After the chicken have been marinated, coat the chicken with the pre-mix fried chicken flour.
7. Heat up an enough amount of oil for frying in the frying pan. When the oil is hot enough, put the pieces of chicken that have been coated with the flour. Reduce the fire into a medium so that the chicken is fried slowly and not burnt during the frying process. Fry the pieces chicken until it is golden brown. When it is golden brown, remove the chicken from the frying pan onto a big bowl layered with several layers of kitchen tissue for oil absorption. When the chicken is dry enough from oil, serve the chicken with some thai chili sauce.
